what's rarer/better a chocolate palomino or a liver chestnut with het pearl? I'm deciding weather to turn my liver chestnut with het pearl to a chocolate palomino or not

There is no rare or better in this game. Breed what you enjoy. You don't make much money selling/breeding horses, so don't worry about what other people think. Just breed quality :).

I think the Double cream DP and false palominos are the rarest right now, since they are the newest.

There are almost 22 pages of liver chestnuts with het pearl if you do a search. And 66 pages of chocolate palominos.

Add Kitm and you get 2 pages of chocolate palominos and 2 pages of livers.

It doesn't matter what other people think is better, it matters is what you prefer. The only thing that makes a horse better game wise is their ability to make more money in shows or the increased ability to produce such horses. color is just personal preference, and the only difference in the two color patterns is the cream which isn't rare at all, but it looks so much cooler! Or you could breed this horse to cremellos and try to get chocolate palomino pearls that way. I didn't get any 3gs like that this time, but later on in the month I can see about 2g foals.

False palomino isn't rare either. They aren't new genetics. Just an updated image.

Some of the rarest colors in the game are not valuable at all because no one breeds for them.

"rare" and "better" are really not a thing in the game when it comes to colors. Everyone has a personal preference. But just because theres a lesser number of something doesnt make it special or rare and I think thats been explained to you before more than once. Why dont you just focus on what you like/prefer and not worry about whats "rare"

To add to what MoonAcre Stables has said. Most people won't pay lots of money for a horse because it is "rare" usually they will pay lots of money for a horse because it is what they personally like and prefer.
