That foal has been put through BA and he must have passed. Papered A so probably of a similar quality to his sire, would have to comparison test to know for sure then. For the colt, you could add another sooty or add a PATN1. He is already hom black, so don't need to do anything there unless you wanted him to be able to throw chestnut foals as well :) Could try add DP and see if one of his parents carries that and if he missed it.

You could add a pearl to the second horse and make him homozygous E if you didn't want him to throw chestnut foals. Could also make him homozygous for PATN1 or add Rabicano if you wanted.

Third colt you could make EE or Ee if you didn't want him to be chestnut based. The sb1 could be swapped for w8 if you liked that look better. You could also add pearl to him, which would express since he's got that cream gene already. You can add a Rabicano or PATN1 and could add roan on his maternal kit allele :) Would be worth running him through BA before doing this though

This all depends on what you want to do of course, but I think that's pretty much all the changes you could do on them, unless you were interested in flaxen or similar. I didn't look too closely at those
