You know, now that you make me think about it: I THINK that if you put a mare and stallion in the pasture anytime between the 2nd and the 13th at midnight game time, then yes, they would breed on the 14th. I DON'T think that if you put a mare and stallion in the pasture AFTER the 14th they will automatically breed. I know you can click the Breed this pasture and they will breed, but I have never left a stallion in the pasture long enough to see if they will automatically breed. Again, I Don't think they will.

You can move your horses whenever you want.
Pasture breeding opens on the 5th of the month, so only on the 5th or later does the "breed my pastures" button come up for you.
On the 14th of the moth they auto-breed in the pastures. I think that it is a feature so that even if you forget to log in you would have the pasture foals, and if you still forget t log in or remove them from the pastures they would be sold back to the game to make you a little money. (pasture breeding costs $500 per horse, selling a horse back to the game gives you $1000.)

You can move the horses whenever you want, but if you leave them in the pastures for multiple days they get a pasture breeding bonus. (that is the part that says how many days they've been in the pastures) If you remove them from the pastures they are going to have the pasture bonus set back to 0.

Pasture breeding ends at the end of breeding season (end of the month, the 28th) and opens back up on the 5th.
